Bacon & Caramel Popcorn
I've had this recipe on my 'must cook' list for a while now, and after speaking with Shona this weekend, she reassured me that caramel is surprisingly easy to make, I thought I couldn't wait much longer.
It encompasses just everything delicious in food; there's the salty savoury meatiness of the bacon beautifully coupled with the oh-so-sweet let-me-stick-your-teeth-together caramel. It is absolute heavenly wickedness in one...and you'll keep having 'just one more piece'.... It's also great fun to watch the caramel cooking and it fully bubbles up in the pan; great food TV!
A lesson learned: metal conducts heat and knives are sharp.... I am now sporting a charming heat blister and sliced thumb..... but don't let that dissuade you! Just make sure you have it all sorted out before you start cooking anything.
Makes 1 biiiiiig bowl
Ingredients
- 1 bag Microwave popcorn
- 5-6 bacon rashers (cooked and diced)
- 1 cup Caster Sugar
- 50g Butter
- 1/4 cup Water
- 1 teaspoon Salt
Cook the bacon and set aside. Cook the popcorn and set aside.

In a medium saucepan on a high heat add the sugar, butter, water and salt and leave. Do not stir. DO NOT STIR. Leave until liquid turns amber golden, should take about 10 mins. It'll be pale pale pale, then turn.
Take caramel off heat and fold in bacon bits.
Pour over popcorn and toss ensuring all popcorn is evenly coated.
Leave for 5/10 mins to cool and set the popcorn. ENJOY.
(Caramel popcorn can keep for 4 days in an airtight container.)
